I had this really cool idea over the Christmas Holidays!!

Some of you know I don’t cook, however I need to stop making this as an excuse not to give my husband a break!                                                             
I need quick easy meals that are super healthy and super yummy that the kids (and we adults) will love.

Recipes that the kids can help with, maybe even low GI recipes.

I am sure most of you are super mums who manage this easily and love it.
I really struggle and I don't love it.

So here’s my idea...

I would love if you could all email through your favourite tried and true dinner recipes by the 20/1/2012. We will then go through them to create a range of 50 different healthy and exciting meals.

Then we would come to your home to photograph you all cooking this masterpiece to go into a book.

So each family would get a double page spread – photos one side – recipe on the other. We would love if there was a story to go with the recipe eg. Inherited from grandma.

                                                                 My aim is to

a)      Help each other

b)      Include the children

c)       A fun thing to do as a family

d)      Encourage healthy eating

e)      End up with a gorgeous personal cookbook of yummy dinners from Brisbane  families.          (approx cost of book $60,  yet to be finalised once quotes are in.)

P.S. Recipe must be original, not a direct copy from any cookbook.

P.P.S. As you can appreciate we will need to limit how far we drive for this, and there will
           be a $55 participation fee.

We will be donating a % to Act For Kids (the main charity that we support)

    Hi Katrina, I really think you could make this, I still remember this was my very first meal I cooked that i thought was fancy/healthy/easy and absolutely delicious. My brother In law was a excellent cook and he really inspired me to start cooking properly he taught me this in 1 night. He died years later but he will always be remembered in my family for his cooking!!

    Chad's Warm Chicken & Advocado Salad.

    1 whole Chicken Breast (Poach in water (you can also add white wine for a lovely flavor) for approx 10mins let cool then shred chicken, season with salt and pepper)
    1/2 Ice Berg lettuce (broken into pieces)
    1 small bag of mixed baby lettuce leaves
    1 advacado (cubed)
    1 punnet of Cherry tomato's (halved)
    Roasted Capsicum (sliced finely)
    2 slices of Bacon sliced thinly and fried in a little olive oil till crispy
    2 Eggs hard boiled cooled and sliced

    Start with Lettuce on a platter then just layer all other ingredients. Sprinkle Bacon over the top then add the following dressing:

    1Table spoon of whole egg mayo
    1 teaspoon of mustard
    2 table spoons of white wine vinegar
    2 table spoons of virgin olive oil
    1/2 garlic glove crushed
    salt and pepper to season

    Combine all ingredients together in a small bowl or jar and mix well together.
    Pour over salad just before serving.

    Serve with fresh french stick and enjoy!!
